Job Summary
Under general supervision, plan, direct, and coordinate activities of an organization or department that serves food and beverages. Oversees the work of team members who prepare food, serve and clean-up in the cafeteria, production, storeroom, tray line and related areas. Oversees the process for stocking of food items. Communicates and implements HACCP guidelines. Complies with regulatory agency requirements.
Essential Functions:
Operations Management Oversee the operations of Food Services including but not limited to: assisting in establishing standards for personnel performance and customer service; coordinating assignments of cooking personnel to ensure economical use of food and timely preparation; scheduling use of facilities or catering services for events such as banquets or receptions, and negotiate details of arrangements with clients. Resolve customer complaints or problems (30%)
Food Preparation Monitor food preparation methods, portion sizes, and garnishing and presentation of food to ensure that food is prepared and presented in an acceptable manner. (30%)
Health and Safety/Cleaning and Sanitation Monitor compliance with health and fire regulations regarding food preparation and serving, and building maintenance in dining facilities. Keep records required by government agencies regarding sanitation or food subsidies. (20%)
Inventory Management Oversee the management of food supplies and equipment including but not limited to: ordering and purchasing equipment and supplies; arranging for equipment maintenance and repairs, and coordinate a variety of services, such as waste removal and pest control. Maintain food and equipment inventories, and keep inventory records. (10%)
Staff Supervision Assist in assessing staffing needs, recruiting, mentoring and monitoring the performance of staff. (10%)
Education:
High School Diploma or GED required
Work Experience:
1-3 years Three years of experience performing food preparation and/or service for an establishment such as an educational, restaurant, hotel, correctional, military, or medical institute required and
1-3 years Lead experience required
Licenses:
ServSafe Food Handle - ANSI - American National Standards Institute required
Knowledge, Skills and Abilities:
Knowledge of supervisory theories and methods sufficient to be able to perform a variety of supervisory functions
Knowledge of food safety techniques and HACCP guidelines.
Knowledge of safety hazards and necessary safety precautions sufficient to be able to establish a safe work environment.
Knowledge of methods and procedures specific to maintaining sanitary food preparation conditions sufficient to be able to direct, coordinate and participate in the preparation of food.
Knowledge of techniques and equipment for preparing food for consumption, including storage/handling techniques.
Knowledge of addition, subtraction, multiplication, division, and fractions sufficient to be able to perform mathematical calculations.
Skill in prioritizing and coordinating activities to ensure effective and efficient completion of the work assignments.
Skill in analyzing and resolving problems related to the work assignment.
Skill in communicating and establishing effective working relationships with other employees, organizations and the public.
Skill in applying the principles of staff development to provide staff training and cross training.
Knowledge and computer skills to access and process information. Microsoft Systems
